Colorado Sweet N’ Sour Sauce

1/2 cup brown sugar packed
2 Tbsp. Cornstarch
1 medium can pineapple rings sliced into chunks (reserve liquid)
1/3 cup cider vinegar
2 Tbsp. soy sauce
2 Tbsp. Minced onion
1 can mushrooms, drained and rinsed
1/4 cup green pepper chopped fine

In sauce pan combine brown sugar, cornstarch, adding pineapple liquid, vinegar, and soy sauce. Stir constantly while cooking over medium heat. Sauce will darken and thicken. Add pineapple chunks, green pepper, mushrooms, and onion, and heat. Pour over precooked meatballs, steaks, or mini meatloaves. Serve meat and sauce over a bed of white rice.
