Salisbury Elk Steaks
1-1/2 lbs ground elk meat 1 can Mushroom Soup
½ cup fine dry bread crumbs 1 egg, slightly beaten
¼ cup minced onion 1 tbsp parsley flakes
1/3 cup water
In a large bowl, combine meat, ¼ cup mushroom soup, bread crumbs, egg, onion and parsley flakes. Shape into patties and place into a baking dish. Bake at 350 degrees for 30 minutes. Spoon off grease, if any, and combine the balance of soup and water. Pour over patties and return to the oven for an additional 10 minutes.
