Elk Strips with Spinach and Yams
2 elk steaks cut into 1” strips 1/8 cup oil
½ tsp coarse black pepper 2 packages frozen spinach, thawed
10 strips bacon, precooked 4-5 pared and sliced yams
4 tbsp melted butter ½ cup shredded American cheese
Heat oil in skillet and add elk meat. Dust with black pepper, then brown the meat on both sides. In a lightly oiled baking dish, layer as follows: ½ spinach, 5 strips bacon, all of the elk meat, remaining bacon, and the remaining spinach. Pour melted butter over the top. Arrange the yams across the top. Bake at 350 degrees for 45 minutes. Sprinkle with cheese and return to oven for 5 more minutes.
