Elk Apple N' Cider Stew
1 1/2 lbs elk meat cubed
1/4 cup oil
1/4 cup flour
2 cups apple cider or juice
1/2 cup water
2 Tbsp. cider vinegar
4 carrots quartered
3 potatoes peeled and quartered
1 medium onion quartered
2 ribs celery quartered
1 large apple peeled and diced
1/2 cup raisins
In Dutch oven, heat oil and brown floured elk meat on all sides. Stir in cider, water, vinegar, and bring to a boil. Reduce heat. Cover and simmer for 30 minutes. Add the rest of the ingredients. Cover and continue to simmer for 1 hour. Add flour if needed to thicken gravy. Add salt and pepper to taste.
